(North Vancouver) Further expanding the Resort’s plant-based offering, Grouse Mountain is excited to introduce two new menu items created in collaboration with vegan cookbook author, Dreena Burton. These new dishes can now be enjoyed in Altitudes Bistro and Lupins Café. 

“We are certainly seeing more interest in plant-based food options from our guests and believe these new dishes will provide healthy, delicious additions to our menus” said Grouse Mountain’s Food & Beverage Director, Dino Gazzola. “Our collaboration with Dreena brings us a new perspective on our vegan offering while maintaining our focus on fresh ingredients and sustainable cuisine.” 

For a healthy and fast vegan option, the Chickpea Salad Wrap with grilled sweet potato is available in Lupins Café. Using crunchy veggies, crisp apple and piquant seasonings combined with garbanzos, this dish is also nut-free, soy-free. 

For a fresher plant-based take on the traditional Pad Thai, visit Altitudes Bistro to try out the new Rad Thai bowl. Made with crisp-seared veggies and tender bites of tofu combined with a punchy Thai sauce served over rice noodles, this dish is also peanut-free. 

“I’m thrilled to be able to share my passion for vegan cooking with Grouse Mountain’s guests” said Dreena Burton. “It’s always great to see more and more vegan options on menus and have the opportunity showcase just how delicious plant-based cooking can be.” 

Dreena Burton has been vegan for over 20 years, in that time writing five bestselling cookbooks charting her journey as a plant-powered cook and at-home mom of three. Passionate about health, she creates recipes using whole foods and minimally processed ingredients. 

While plant-based dining is incredibly popular from a health and wellness perspective, there are also additional benefits from a sustainability and animal welfare perspective. As a member of Ocean Wise and The Green Table Network, continuing to move towards more sustainable dining practices is a natural fit for Grouse Mountain.
